What is it and how is it produced?

Matcha green tea has become quite popular lately. Matcha means powdered tea. Unlike green tea, in matcha tea the leaves of the plant, before harvesting, are shaded and this change in sunlight increases the levels of chlorophyll which is rich in nutrients. Once harvested, the leaves are steamed to stop fermentation which would reduce these elements. After drying, they are ground with stones and give us a bright green powder.
